It all began when I was 15 years old.
I started working at one of the busiest and well known takeaway pizza restaurants in Moonee Ponds.
From waiting tables and cleaning dishes, I got promoted to pizza maker.
Very quickly I realized that I enjoyed pizza making a lot more than school, it kept me out of trouble and kept mum off my back.
Food has always been in my DNA, I come from a very large family and food was made from scratch. Most of my family was selling wood fired homemade bread from home.
The most important thing as a Calabrese (Calabria is a region in Italy) is making food with quality and fresh ingredients and cooking it perfectly.
I built a wood oven at home, to perfect my secret recipes serving my family and friends. Over the years I have learnt so much making pizzas that I even taught my mum a trick or two. The art of pizza is not only having an incredible taste, but also looking enticing.
After working at a number of award winning pizza restaurants, it was time to move on.
Thus my journey began, I built a traditional wood oven on an engineered trailer, created a tantalising menu and now I share the joy of rustic authentic Italian pizzas and cooking at functions and parties.
